Recipe
Veggie Dippers
(For children 1 year and older)
Ingredients
1⁄2 pound eggplant
2 cloves garlic, peeled
1 avocado
1 tbsp olive oil
1⁄2 tsp salt
1⁄2 lime, juiced
2 large carrots, peeled, cut into sticks
2 red bell peppers, cut into sticks
2 yellow squashes, cut into sticks
1⁄2 pound green beans, cleaned, tips cut off
Directions
1. Preheat oven to 350°F.
2. Slice eggplant into 1⁄4-inch rounds.
3. Place eggplant and garlic on aluminum foil-lined pan.
4. Drizzle with olive oil and place in oven. Roast for 30 – 40 minutes.
5. Once cooled, remove and discard skin from eggplant.
6. Cut avocado in half, remove pit and scoop out with a large spoon.
7. Add eggplant, garlic, avocado, olive oil, salt and lime juice to food processor and puree until smooth. Serve with the fresh carrot, bell pepper, squash and green bean “sticks.”
Activity
Island King
Place space markers (Hula Hoops, carpet squares, pieces of construction paper, or old towels or rags) on the ground to create “islands.”
Place at least one for each child and spread them apart so that there is enough room for the children to move about between them.
Play music and dance about.
When the music stops, everyone jumps onto an “island.”
Suggest for children to dance like different animals, like a bear, a dog, a cat, or a bunny.

Eggplants are a great source of folic acid and potassium.
In Japanese culture, eggplants are a good omen.
The eggplant is believed to have originated in India where it is considered to be the King of Vegetables.
